The Cunico, Gooding, and Wehr book is excellent (we use it in our training courses). I haven't looked at the Katz book so can't give you a comparison.

We (LC Resources) present HPLC courses in Europe and/or the UK once or twice per year (usually in conjunction with Advanstar), but we have never been able to get a critical mass of attendees to justify a biomolecules separation course, so we tend to focuse on basic intro, method development, troubleshooting, and LC-MS. The method development course has a certain amount of "large molecule" content, but I don't think that's what you're looking for.
