Analysis of sugar is done by HPLC using RI detector or PAD detector.

You can get good sensitivity in APCI- mode with chloride adducts. I've done this with an amino column with a mobile phase of 80-85% acetonitrile. You can add methylene chloride or chlorform post-column, but I've added a little to the mobile phase and it worked great.

What particular types of samples are you interested in? One needs to be a bit more specific. Also what kinds of carbohydrates are you looking for?
