Loss of one water molecule in ESI-MSMS

Hi all,
I am doing UPLC-ESI-MSMS on peptides with molecular weight less than 3 kDa. And once in a while I observed the loss of one water molecule after the deconvolution. I am wondering in which case can the water loss happen? Is it condition / parameter driven, or structure driven?
