in-process analysis of residual enzymes trypsin or carboxype

I have been asked about a fast HPLC method to monitor residual enzymes in process solutions. I would not normally think of HPLC as first choice with all the sensitive ELISA tests floating around nor sensitivity concerns with routine UV monitoring with HPLC. If the chromatography is stable, maybe a fluorescent derivitization that is selective, off-line or post-column, might be an option, I suppose.
Any guidance on sensitive process monitoring for residual enzymes?
