I am a student preparing a method to extract (-)- Epicatechin. How do I ensure results on the chrootogram will differentiate (-)-Epicatechin from (+) Epicatechin, stereoisomers that both elite at 280nm

You will have to use an enantioselective ("chiral") column and optimize the conditions to separate your isomers. Seefor example:
