Can anyone even guess at the number of unique and commercially available stationary phases in reverse and normal phase liquid chromatography today, including commercially available chiral stationary phases? Thank you.

I'd go so far as to guess that it numbers in the hundreds.

There are > 570 reversed-phase columns in the PQRI database on the USP web site. Taking a SWAG* that reversed-phase columns are about 80% of the total would imply something over 700.
