Is it possible to quantitate concentration of organic acids in a test sample by urinary profile of control urine and is it possible to quantitate organic acids by GC-MS without a standared curve.

This is very common. Do a Google search on "urinary organic acids by GC MS". There is some sample prep involved which usually involves the formation of derivatives.
Because of the derivatives and sample prep, I don’t thnk quantitation without a standard plot is a good idea.
