Hi All,
hope everyone is ok and not working too hard!!!

I was hoping someone might be able to point me in the right direction where i can find a GC application for the analysis of Calcium Propionate. Or if there is a specific method for the detection of calcium propionate in bread or baked products.
Any information regarding method would be greatly appreciated. Thanks and hope you all have a great weekend!!!

Calcium Propionate will not pass through a GC column. If you can accept a value for propionoic acid and assume that it is all from calcium propionate, you can analyze for propionoic acid by GC. Will that work?

Thanks for the response, your suggestion might be an option but i will not be able to confirm for another few days, if its no trouble for you would you be able to advice as to the analysis of propionic acid by GC.

I put the keywords "propionic acid baked GC" into google.com and came up with a nice list of possibilities, such as "A rapid capillary gas chromatographic method for the determination of propionic acid and propionates in bread and bread products "

If you add "bread" to the list of keywords, the search seems to include a few more analyical methods close to the top.

I would suggest that you look around at the various methods that can be found on line and see what would be the best fit for you analytical objectives and the equipment you have in your lab.

I did come across that particular journal and was able to locate analytical method for extraction of propionic acid, also found GC application for the analysis of propionic acid using the set up that i already have.
As you mention if they will accept they value of propinonic acid and assume it is all from calcium propionate then its all systems go!!!

I'd look at IC as an alternative if you can get access to one
