Ammonium Acetate Salt

Hi all. I just wanted to know if anyone knows how long ammonium acetate buffer salt is good for after opening the bottle. Is it good forever? Does it degrade a lot over time? And damn it is hygroscopic! Shouldn't we store it in a desiccator in the fridge?

I ask this because we have some ammonium acetate in our lab from Sigma. I don't know exactly how old it is, but I suspect it is probably 4 years old at minimum.

Now, being concerned concerned about the ammonium acetate salt being good, could I make a buffer with acetic acid and ammonium hydroxide? Shouldn't I get the same buffer system using the acid and base??

Disregard the acetic acid and ammonium hydroxide question. I have found the answer.

But my question does still stand for the stability of ammonium acetate salt.
