Sorry - just wanted to clarify - you should us USP grade water
(not WFI) for lab testing. I believe USP <645> has specs for USP
water as well.
Add some ions!!

In my early years in the lab, the company I was working for was installing a water for injection system. Part of my responsibilities were to release the WFI on a daily basis before the morning's startup. To pH the water we added a few dros of saturated KCl before taking the pH. The meter woud rapidy go to the correct pH with no drift
