Has anyone got any literature methods for the analysis of phospholipids (especially phosphatidylserine) from oils by HPLC or GC.

If you're working with lipids, you should obtain a copy of W.W.Christie's book Lipid Analysis, currently in third edition, publication details are available at his website, along with many free general sections on analysis, including PLs.

A Google search will also provide many methods, but W.W. Christie's book has been through several revisions, and the methods are usually robust.
