Determination of ethanol in chocolate

Hi everybody,

we have to quantificate the ethanol content in chocolate sample. The ethanol content should be as high as 5%. The problem is that the sample is not homogeneus..
Is there anyone that have some experience on this kind of analysis?
Could you give me some reference or some clue?
