Trying to determine the % of SA after 60 days @ 45C.
I think my extraction using Methanol is creating Methyl
Salicylate which is lowering the % of SA that I would
expect.
Any thoughts ?

When we formerly did salicylic acid assays, we extracted using methanol containing a few percent acetic acid. Chromatography was straightforward using water containing 4% acetic acid and either methanol or acetonitrile on RP-18. I don't think the methanol in the extraction solvent is causing your problem: if so, your 60 day ambient or 4C samples and your time zero samples would be affected the same way
